Whether you serve it for dinner or as a side dish at a BBQ, this Pesto will be the star of the show! It’s made with tender cheese tortellini tossed in creamy caesar pesto sauce, with tomatoes, olives, green onion, sunflower seeds and fresh basil. Watch as we teach you how to make pesto today.
The secret is using the pasta cooking water – it emulsifies with the oil in the pesto which makes it cling to every strand of pasta. A technique used in every Italian household! Make this with homemade pesto for the best flavour.
THE INGREDIENTS:

Pasta

Bring a large pot of water to the boil with the salt.

Add pasta and cook for the length of time per the packet.

Just before draining, scoop out 1 cup of of the pasta cooking water.

Drain pasta in a colander, leave it for a minute.

Transfer pasta to a bowl (do not use pasta cooking pot, too hot).
Finishing

Add tortellini to a large bowl. Add caesar dressing to the pasta and toss to coat. Add tomatoes, olives, green onion, basil pesto, salt and pepper and garlic powder and toss to combine. Add sunflower seeds and ⅓ cup fresh parmesan cheese and toss to combine.

Serve warm or cold. Store in the fridge. If it seems to dry after sitting in the fridge (the pasta can absorb a lot of moisture) you can add another spoonful of caesar dressing and/or pesto. Garnish with the remaining parmesan and fresh chopped basil before serving.
